Marston, an American bistro with worldly Swiss chef to open on West 53rd

Chef Alain Soiliard

Restaurant veteran Patrick O’Sullivan will open Marston, an American bistro serving “worldly comfort food” cooked by his partner, Claude Alain Soiliard, in the duplex space that was Swizz at 310 West 53rd Street. Expect to see the Swiss-born chef’s acclaimed tarte flambé in several flavors. (Definitely in Hell’s Kitchen.)

With only modest rehab – two new johns – and do-it-yourself design aspirations, the team hopes for an October opening.  O’Sullivan (whose restaurant stints have taken him from Jacksonville, to Los Angeles and Key West) met the chef at Seppi’s in the Parker Meridien Hotel where the thinly rolled tart, a typical lunch in his Swiss hometown, was a Soiliard signature.

The chef grew up on a working farm and winery, first apprenticing in Swiss kitchens at 16.  Arriving in New York at 22, he worked at La Reserve, San Domenico and Lespinasse and even did an apprenticeship at Le Cirque under pastry chef Jacques Torres. He opened Seppi, named for his father in 1998.
